Acidity in Wine

In discussions concerning the tricky but in my oppinion illustrious 2007 vintage, the topic of acids seems to arise quite a bit. A couple weeks ago I got the opportunity to sit down with Mike Willison from Rex Hill. I thought this would be the perfect opportunity to pick his brain a bit to get an in depth look at what acidity is all about. I presented him with these 4 questions:
1. What role does acidity play in wine
2. Why is acidity important when it comes to wine
3. How do we discern acidity
4. How does Oregon's cool climate affect the outcome of acidity in our grapes
5. How does acidity aid in aging wine
